Technical Information: Year: 1998 Region: Montes de Toledo Type: Red Wine Alcohol Content: 13.5% Vol. Grape Variety: 51% Cabernet Sauvignon, 35% Syrah, 14% Petit Verdot. The vineyards are guided along high trellises in which the canopy management system is used, such as the Scott Henry for Cabernet Sauvignon grapes and Smart-Dyson or Lira for the Syrah and Petit Verdot. The trellises are constantly monitored in order to achieve maximum sunlight exposure of bunches and leaves. Sugar Content: 1.4 g/l PH: 3.91 Total Acidity: 3.05 Harvest: Hand-picked at night in late September, once the grapes are as ripe as they can possibly become. Production Method: Made entirely using grape vines cultivated on the clay and lime soils of the Valdepusa Dominion (in Malpica de Tajo, Toledo), owned by the family of the Marquis of Griņķn since 1292. Harvested by hand and then removed from the stem and moved by gravity to the fermentation tanks. Prolonged maceration of up to 4-5 weeks and aging in new French Nevers (75%) and Allier (25%) oak barrels for thirteen months in a climate-controlled aging cellar. Organoleptic Description: A veiled** ruby-red color. An intense, complex bouquet, with berry and spice aromas. Well-balanced, elegant and persistent to the palate. Recommendations: This is a wine to be kept for a long period of time. It will provide pleasure either now or for at least the next 10-15 years, if it is moved and preserved at the right temperature and humidity level. Pour and serve immediately at 15-17ēC in large glasses (<300 ml) with game, baked dishes, poultry, cured cheeses and so on. Logistic Data: |
